Full Version: Pork Butt pulling temps for Utah?

I was told to let the butts hit 204 degrees with my thermapen... I read several recipes that cite 195 as a pulling temperature.

What do you folks do?
204 is just right for pulling. 195...the meat is still a little snug.
Use temp as an indicator when you're getting close. Otherwise, when the bone pulls right out, it's done. Different butts will be done at different temps.
I do the same thing as Gumbo. when the bone pulls clean it's done.
Pull when you're too danged hungry to wait any more :wink:
