If the taste & texture is anything like beef, I would follow that route, but I've never thrown any deer or elk on a cooker, either. All I've ever been exposed to is steaks/chunks.
One suggestion would be to try the Cookshack forum. There's people from all over on that one, and I know there was one person a few years ago talking about moose. Her name was Andy, I think, and her stuff should still be in the archives. Try it!
