Here's a great recipe for a compound butter for steaks. It uses Black Garlic which is a fermented/aged garlic that has an incredible taste, akin to an aged steak. It's not available everywhere, but it really is worth trying out.

A compound butter is great to add flavor to tender cuts. Since Gary sent me this recipe I've tried it out on everything from prime rib to strip steaks.

I wonder if this is what Ruth's Chris uses.
