Full Version: Electric smoker went out...

I started a pork butt last night. I smoked it for about four hours in my offset smoker but at 1 am I was ready to sleep. I transferred the butt to my Bradley smoker to finish off the cooking process. Sometime while I slept the power went out! Are you kidding me?

When I woke up at 7am the internal temp of the butt dropped to 85 degrees from the 114 degrees when it was originally placed in the electric smoker. I restarted the electric smoker and it is cooking away now.

Will this butt be safe to eat if I continue cooking it off to 190 degrees plus? Has anyone else had this happen to them? If it is safe will it even be edible, texture wise, etc.?

<edit> I think I am going to scrap the butt, too much time in the danger temp zone. Besides its not like it is an expensive cut of meat.

No, it's your Bradley that's jinxed. They have some real issues.

Hmm, I notice that it's been a few days since FishBoy has posted, hope you didn't eat that butt and end up in the hospital or something :wink:
LOL, no I didn't eat the butt and my health is OK (although I've been trying to kick a cold ever since the sleepless nights of the Eagle BBQ cook-off).

The Bradley is a POS but I do find it useful for smoking salmon. And since I can't afford anything else, and I have 7 smokers/BBQ's, my wife would do more than read me the riot act if I got another.

Also, if I put the butt in the oven instead of the Bradley the outcome would have been the same. The power went out for the whole house, not just on the smoker.

Next time I will smoke the butt in my offset then transfer to the oven at bedtime. I'll also place my RediChek on my nighstand next to my head with the low-temp alarm set. So far I am 0-2 cooking a butt and getting sleep. MUST BREAK THE STREAK.
