I decided to try and practice up a little on my chicken thighs. I think they came out pretty good.

I think I will use toothpicks for the skin next time

You know Doug, those really don't look that good from here, may be best that you run them on up to Logan so as I can get a closer look. 8) Did they taste as good as they look???

absolutely. I really liked the bite through skin. First time I was able to eat the skin on my smoked chicken without pulling it off first.

Looks good. Any hints as to what you did with the skin to keep it from being rubbery?

I've read of people using a mayo slather on the skin to produce a good finished skin but haven't tried it myself. It supposed to slowly cook off protecting the skin from going rubbery early and provide enough fat to help it crisp? Just guessing there.

I cooked them for about 31/2 hours...but after hour 2 I put them into a pan on the smoker with about a 1/2 inch of thinned out BBQ sauce for about an hour and then back to the smoker to glaze them.
