Yo Pitbull, I love smoked chicken wings. What I do sometimes is coat them with my favorite rub and smoke them for about 1hr at 250 followed by one hour in an aluminum pan smothered in again my favorite sauce for about 30 minutes, works for me. The is another post that I made sometime ago using a wing or drum rack with pictures, I like that technique on the BDS. The wings and drums come out crispy. Have a good one.

How do you do catfish? Temp and time?

Yo I2love2smoke, don't mind helping in certain area's which don't concern my lively hood as my catfish recipe is a private trade secret. There are plenty of recipes out there I'm sure that you can find one. If you ask some of the other BBQ restaurants how to do or how do they make one of there top selling items you will hear the same. Not trying to be a butt about it, but there are some things you just have to say no to and this is one. Hope you understand?
