Going southern - Frankenswine - 02-13-2010 08:16 PM
I had a craving for some good southern food today so I cooked up some fried chicken, collard greens, mac and cheese and some jalapeno bacon and cheese cornbread. It is a little BBQ, because a used some hamhocks that I double smoked for the greens.

Thanks for the comments. I can post the recipe later today when I get home. It's pretty simple, but tasted great.
Ok here is the recipe that I used for the chicken.
1/3 C water
1 c hot sauce(Iused Frank's Red Hot)
2 C flour
1 tsp black pepper
I also added T's steak and chop to the flour.
Season the chicken with salt, pepper, and garlic powder. Dip it in the egg wash then roll in the flour until well coated. I like to let it sit for a minute and then double dip it in the flour. Then fry it up in oil heated to 350*.

Ya know T, if you would just post the recipe for that Steak and Chop Dust, you would not have to spend all that time making it!

I second the motion that T post that recipe! And T, bear in mind that I've already tried that version of the recipe you gave me that included Cap'n Crunch, so don't even try to pass that one off again! Give up the real thing dude

Is that a chicken leg? I thought it was a well fed toothpick, that wouldn't even get me started!
Doug, that is a nice looking pan that bread is in. Is that one of the camp chef ones?
