If you like trout, check this out!
First I must give a big shout out to Doug and Matt who keep me with a fresh supply of trout. Becci loves me to fry trout for her early Sunday mornings for breakfast. Today we decided to have some for lunch. Knowing that their are a lot of cats that fish, I thought that I would share one of our favorite ways to prepare this fish.

TROUT
Pre Heat oven to 500 degress
For five trout
5 slices of bacon chopped
1 medium onion sliced thin
1 red bell pepper, stemmed, seeded and chopped medium
9 oz baby spinach
2 tsp cider vinegar
lemon pepper
Chili sauce optional for a kick!

Descale trout pat dry inside and out. Season inside of trout with lemon pepper. Cook bacon until crumbly. Remove bacon from skillet. Into bacon fat, stir red pepper, onions, and a little lemon pepper, cook vegetables till soft about 5 min. Stir spinach in by handfuls and toss, which will take about another five minutes until spinach is wilted. Stir in Vinegar. Stuff trout with vegatable topped with crumbled bacon. Cook trout for ten to twelve minutes or until fish flakes evenly with fork. Enjoy!!
