July 4th weekend
Here is one of four pork shoulders I cooked up for some friends.

Brisket, Ribs, Chicken, Turkey Legs, and Boudain at my house. Life is good. Pork looks good B.

Yo Brian, looks good bro, I'm thinking about doing one in the pot just to break things up a bit. I didn't cook at all this holiday, we went out to dinner yesterday with Tony, and Mark. We have a big cater tonight at 6:30, the boss, and I thought that we would just relax. Hope everyone had a nice one?

Cooked up some brisket, ribs, DO cornbread and a little buckboard bacon. Can't ever figure out how to not cook for an army though. We are swimming in leftovers!!!

I got lazy.... I did cook up some Texas Wild Hog chops on the Webber kettle last night using some cherry... it was a big hit..
Started 2 butts last night at 11 pm. It took me awhile to nock down the heat. I am used to colder windy cooks where I have to shut it down slowly. it was about 255 and I like to cook like 220 for the first 2 hours or so. Hit the hay at midnight at 235.
I think I do something wrong in my procedure with my modified minion method.?? any tips would be appreciated.
I use a hollow coffee can in the center of my WSM and stack in a nice ring of kingsfords and wood chunks. Then I get just enough coals started to dump in the empty coffee can and then pull the can out so now I have a nice hot spot in the center of my fuel. I think this next step might be my problem. I then place 3 chunks of wood on top of the hot spot to and wait till they are nice and full of fire and then put on the mid section with a hot water pan then shut her up..i think this long open time gets things going to much? I think I should have put the wood chunks on the in the chimney so that the fuel bed doesn't get started so much??

Then I slept like a log and at 6am it was dead calm still and the temp was 190 and meat at 147? took me 2 hours to get it up above 225. Can you say rusty. Filled up the water pan and sopped the butts with apple juice. About the time I started to ramp things up this am the wind picked up pretty much but so far I haven't put up the windscreen.
I was thinking the breeze would help the coals get going but I think that was offset by the wind heat loss.
Good news is there is plenty of fuel left to go the distance and I have all day to hit my 204 degrees.

Shoulder and knee are getting a little stronger every day. Still crossing my fingers that I'll be back to full strength before FWI. I am getting pretty good at this one-armed thing, but eating with my left hand without feeding the shirt is still a challenge. lol

Hey don't worry about the feeding the shirt thing, I have two hands, no excuses and still managed to hit my shirt on the last bite of lunch today. DUH! :roll:
