Smoke marks...not grill marks...
Hey all, I used a new technique today to smoke some chicken thighs and they came out with some great looking smoke marks. (not grill marks) I was kinda wondering if that is common? Has anyone else run into this? Sorry if this is a dorky question... :?:

???, those horizontal lines across those aren't grill marks?

The chicken came out of the brine(out of the fridge), rub was added, then it was loaded on a cool grill that had not been heated with the drum. they went in for an hour skin side down, when i started turning them i noticed the lines. The lines were where the chicken had not been touching the grill. The chicken was finnished off skin side up. I woundered if the brine and moist smoke had created some sort of smoke (ring) lines.

We've had it happen before. If you use one of those grill covers with round holes that they make for vegetables, you can get polka dots Big Grin I did have some success "blasting" them off with my spray baste, but this knocked my rub off :cry:
