new to smokin
Today i talked with Jamie at standard wood and i bought some mesquite lump charcoal from him. I aslo purchased some apple wood. I later found out that q4u is a place he delivers wood to. So i cheked that place out and had some good grub.

Jamie told me that the mesquite lump is great to smoke with especially if i use hickory or apple wood chuks to smoke the meat.

I have a 100$ cheap brinkman gourmete smoker that was given to me so i kinda want to utilize it.

my question is, are there any classes on how to use a smoker to make good pulled pork or ribs? who do i need to call to have teach me.

How do i get my fuel to last longer han 1.5 hours?

you have three major issues:
no air control to regulate temperature.
the coals are choking out in their own ashes.
Inaccurate temperature readings from the location and type of thermometer.
The online que community affectionately(?) refers to this smoker as the ECB or El Cheapo Brinkman simple modifications can make it much more user friendly. Also, did you spend alot of that good charcoal just heating up the water in the pan, or did you start out with hot?

Hey welcome to the site. There are quite a few on here that can help you out. The first thing you did right was head to Q4U. That cat there can help you a TON!!! Ask questions here like you are doing, and you will find the help you need. Norm has already given you some good pointers.

That sure was good stuff!

Yeah i added a new temp gauge. sorry i didnt mention that earlier. 1 in the morning i tend to drift off. I also added 3 bolts 1.5 inches of the bottom of the pan and added me own grate to it. Mine is not the water smoker it is the one above it. Like the cajan cooker one. The coal pan can be used as a grill. Thats the one i have.
i start out with almost boiling water. So that i dont waste time heating it up.

im smoking right now with that stuff jamie gave me from standard wood. He told me it had very low smoke and very low mesquite flavor. im not a fan of mesquite and jamie told me he wasnt either hahaha
