My understanding is that we're both right, the Rock and Ribs have been going since before 2006, (2003 I think, but I'm not sure at all of that as a fact), but 2006 was the first time it was sanctioned by the KCBS and it was called the Utah Barbeque Championship, 2007 was the first time it was sanctioned as the Rock and Ribs, so 2008 was the second, and this year is the third. :wink:

No problem, I don't mind making it what ever, the T man says it should be, this post just matches the KCBS information, I'd be interested in figuring it out and getting it sorted for, (this year or), next year.

Yo, Oink County was the original winners of the first sanctioned event followed by Otis and the Bird winning the Big Green Egg this was the year that Blues Hog (Bill Arnold) was there and Checkered Pig, Tommy Houston won last year. This should be the 4th annual.

Well I see there is only 3 teams signed up so far with only 4 weeks remaining. Is anybody else going to this? If so, let's get it cranked up!! This is a premier event people!

P.S....I have not sent my entry in yet either. :roll:

The only vehicle I have ever seen up there was T's catering truck back in 2006

Yo, here is the low down. The teams with motor homes or trailers will remain as always, and teams that don't require a lot of space will have placement up top and on the bottom making more room for all. The whole venue will be going over an entire face lift next year I am told. The Gallivan Center is trying to make it a great venue for the cooks. This year the focus will be more on the cooks and more public interaction. They have spent good money better entertainment. Jay is right, we do need to get the teams registered that are going to be attending. Utah Smoke will be there. The purse this year will also be 10,000 as last years. I may also be asking for volunteers to help cook pork butts for a charity buck a cup if it's held. Lets continue to make this a premier event. We are also working on better parking for the teams. We have already told you about the team room rates at the MARRIOTT for $79.00 a night. We have ten rooms reserved and if we need more let us know now please? Lets make it happen! Thanks

Welcome to the forum!

The due date for entries is the 8th of August for the Rock and Ribs, Salt Lake City, Utah.

So if your first competition is the 14th, your second could be the following weekend!

Practice, practice, practice is the only way to go, get your timings down so that you can work out a time line, spend some time looking for pictures of "turn in" boxes, and practice them at home, with Green Leaf Lettuce, curly Parsley or Cilantro.

Personally I'd stay away from the Cilantro, unless you're trying to add the flavor to your meat. JMO!

Practice cutting Brisket the thickness of a #2 pencil, practice cooking it so you can cut it this thickness too, under cooked you might cut thinner, over cooked you might cut thicker, but those things will be noticeable to an experienced judge, note that across the grain is easier to take a bite out of, than with the grain!:wink:

Yea!!!! what they said! But there are 2 rules I have for the first time competitor

First, the #1 goal is to turn everything in on time! So start cooking early and get your meats done a minimum of an hour early,and make up your boxes with greens before turn ins start!

Last rule.... Have fun!! otherwise, it will be your first and last contest!!!!

I would like to know the team count also. Unfortunately if this is not going to be a qualifier I will not be making it there. Two days of vacation, $1000 just to do it, and 24 hours of driving is a little too expensive for a non-qualifier. Just doesn't seem like a lot of enthusiasm/chatter either this year, especially with it being only 2 weeks away.
