You can contact Arlie Bragg for an application as a competitor or even one for a CBJ (Certified BBQ Judge). Hello Doug,

Thanks for the info, and the answer is all of the above.

We carry three lines at our store and I have fallen in love with all three. To better learn how to use them I have started grilling/smoking regularly. Who would of known that this would be my "gateway drug" to bbq.

I smoke on a Traeger Lil Texas and Big Green Egg. I just did my first full chicken on a Holland Grill (is that legal?), which was great. I posted picts on this site.

We're heading up Thursday morning too but we'll be spending the night in Park City with my stepmom. We'll be making the short drive over to Snowbird Friday morning.

Jay, I looked at the Phoenix to Las Vegas to SLC route but I think we'd still make about the same time by doing our typical route of going over the Glen Canyon dam and then up US 89. We don't go very fast and the shorter distance, almost 100 miles, will save on gas.

You and Vince have safe trips here... Glad both of you are coming out...

Just so that anyone coming out is aware... We have had a LOT of rain here for the past 3-4 weeks now... It is most damp, and it has been unseasonably cool.. And while it is due to clear up and warm up this weekend, I would come expecting temps that are going to feel pretty darn cool and damp, especially at night... I live at an elevation here in Park City that is not all that different from what we will be cooking at over at Snowbird... And I can attest to the fact that it is pretty darn "nippy" at night and in the early morning hours right now... The moisture in the air (due to all the recent rains) isn't helping it feel any warmer, either...

This is coming from someone who lives in cooler temps year round... And right now it is feeling cool/cold to me... We haven't turned off our heater at our home as of yet, if that tells you anything... So those of you coming in from climates that have pretty much been in the 80's - 90's already this summer might want to come prepared... It is a long ways from Snowbird to a Wally World down in SLC in order to find long johns!

Dang it! We just had R&R BBQ Tube tops and speedos made for Grill on the Hill, expecting warmer or hot weather.

I guess we can save them for Fire and Ice?

We received an email regarding sampling at the grill on the hill asking if we would fit into the parameters of the code... I cant find a specific list of things that would be required for us does anyone know what we would need in order to be able to give out samples? thanks

If you click on the health department link in that e-mail it will show the guidelines/ requirements to give out samples. The one question I had was about the the Utah food handlers card which of course out of state teams won't have. I e-mailed Arlie and Misty on Monday morning have not heard back from them.

Not sure about he legal aspects of handing out samples but last year we gave away everything that was left with no issues...

I indicated on the entry form that I would sample, but then I found out Monday morning that we need a temporary permit from the Health Dept. Uh, no thanks. Competing is hard enough without having inspectors crawling up your nose with a microscope.

I basically responded that if I have to jump through hoops, I won't pass out any food. I'm not taking it back to Chicago, so it would be a real waste for me to have to throw it out...

As for the cold weather. I'm bringing shorts... As long as the temps are over 40º, I wear shorts... and carry a flask ;-)

I'm flying in tomorrow with my girls and sister... So I can acclimate to the higher elevations...

I've always got an empty cooler with ice if you need a place to throw it way. Wouldn't want it contaminating our drinking water source!

Especially when the site we were directed to on Monday, 4 days prior to the event, says that we should obtain this permit two weeks prior to the event...

Packerbacker called earlier today and during our conversation it came up that he was unaware of the new KCBS rule on brisket. Does everyone know that brisket must now be turned in at 225 degrees when it hits the turn in table? This means you should probably take it to 250-260 so it's right when you get there! I'd hate to see anyone DQ'ed over this...
