Favorite thing to do with left overs
So Sunday I threw a whole chicken on the WSM for Sunday dinner. Came out fantastic - nice rub that went well with the smoke wood, tender and juicy.

As we were cleaning the carcase we realized we still had a pretty good helping of chicken left. My wife and I started brainstorming ideas of what to with it and finally settled on the idea of a smoked chicken pot pie. Wow! I think I found my new favorite thing to do with left over smoked chicken, we had it for dinner last night and I just finished the last of it today for lunch. Man oh man good eats!!

Anyways what are some of your favorite things to do with your left over BBQ?

That sounds good. Try your leftover smoked chicken in "Chicken enchiladas". Smile
I smoked a couple of pork butts I got from Larry a few weeks ago. Then froze what we didn't eat or plan on using for meals that week and made "smoked pork enchiladas" using my wife's "chicken enchilada" recipe. Fantastic, great flavor and of course no left overs. :shock: :oops: :cry: We plan on making a double batch next time. They guys at work were salivating pretty good. 8)

Share them with the neighbors, you wouldn't believe how popular this can make you!!! Oh, and make enchiladas, sandwiches, burritos and I've even tried a quiche with pulled pork in it (not bad, not great). My most favorite thing though is to freeze some of it and use it to make Peach Pork Baked Beans at some later date...

Ah Sampson??? I never thought there was such a thing as "left overs" in your house Tongue Who woulda thunk :roll:

Don't forget to make a stock from the bones of that smoked chicken carcass. After you've made the stock, put it in the freezer and keep it there till you need it.

Pulled pork Tamales are great. The pot pie is a great thing also. We make a Smoked Salmon Pie that is fantastic.
But the Best thing to do with left overs is to invite freinds over and eat them before they become left over.
