collard greens anyone
I don't know about you guys but I love a good pot of collard greens! I made some st louis style ribs the other day and cooked my trimmings right along side the ribs. The next day I cut up the trimmings and threw them in a pot with some greens and they were outstanding!!

1) 3 bundles of fresh greens
2) 1 tbs of your favorite spicy rub
3) trimmings cut up in chunks
4) salt to taste

Throw it all in a pot of water bring to a boil then let simmer for a couple of hours

Not rocket science but man are they good

I also love collard greens or Kale.
I serve mine as a side dish with Brazilian Black Beans (feijoada) and rice and a meat.
Sometimes I will add linguiça (sausage) to the collard greens like you added the rib meat
Here is how I prepare them:
1-2 bunch(es) of kale
2 tablespoons of oil
1 chopped onion
1 clove of crushed garlic (optional)
salt and black pepper to taste
Preparation:
1. Remove the stems of the kale.
2. Rinse the kale and drain the water.
3. Put a leaf on the top the other and roll it.
4. Cut the kale into fine strips.
5. Sauté the onion and the garlic in hot oil.
6. Add the kale,the salt and pepper and stir well.
7. Add a bit of water and cover the pan with a lid.
8. Cook the kale under medium heat until done.

That sounds pretty good dave I will have to give it a try. I tell you what I liked to eat mine with, pinto beans, corn bread (and not with sugar in it either because that would be cake not corn bread), fat back and home fried taters and wash it down with cold glasss of sweet tea which I also can't seem to find around here unless I make it myself LOL

Personally I've never cared for the dang things, that is until this fellow over in Taylorsville had me taste some of his! There's this joint on 5400 South at about 39th West, near the liquor store. The owner's kind of a character but his food is great :wink:
