We are doing this great recipe that Dana found, Roasted Pork Tenderloin with Pear Chutney, on the weber kettle, Kevin and his family are coming over for the feast!

Enjoy your weekend

No smoke wafting here today. I cooked some butts on my new homemade drum yesterday for two small informal catering gigs.

It was pretty easy to make the transition from my usual WSMs, but I still need to perfect my temperature control.

All in all I was very happy with the results, as were those I fed.

Yesterday I turned one of my WSM's into a charcoal grill and cooked some New York Steaks. I took the charcoal grate and ring and moved it to the water pan position. Saturday night I doused the steaks with worchestershire sauce and Montreal Steak Seasoning (go easy on both), wrapped them up in plastic and let them sit overnight. I tossed in a piece or two of plum and apple wood while grilling and they came out great.

Didn't get to cook anything today, but did a brisket and pork shoulder on Saturday for the Wife's B-day. Hey Sampson, I had to try your fatty idea with the apples and brown sugar for a snack while the rest was cooking. Those were great. I will be making them again real soon.

I just broke in a new backyard smoker...the ABS All-Star. Did some brined leg quarters on Saturday, and surprisingly even after I over-cooked them to 190 degrees, they turned out pretty good. Crispy skin, tender meat. On sunday I tried a couple butt experiments for a pool party at my brother's house. I used the method on the internet on that Chris Marks video.......injected with that Cajun Injector garlic and herb stuff. Good -- different -- but good.

Thanks, but they aren't hard to make. I'll have about $400 in two cookers when the second is done, and that includes all the materials and tools to build them.

Smoked up some ribs and chicken this weekend. Yes, the chicken is overdone, but at least the skin was crispy!

Smoked three pork loins with my dry rub and used pecan for the first time. They turned out great!! Big Grin Lots of compliments from not only my brothers family but also several from work as well. Tender and moist with about a 3/8" smokering. Gotta love it!!
