Dave called me today and let me know there was a request that I am happy to throw 2 cents into. I have not been on the site in a few days so I missed the post.

I am currently trying to feed two boys, get the wife on a plane in the a.m. and have a few minutes to myself! However, I do have the goods! I need to dig out the "book" and I will on pass the recipe later tonight.

My mother learned this recipe from a woman named Lillian. Lillian was a part of my life growing up as a kid. With no disrespect, and hoping all understand the times and where I lived, Lillian was our maid. For 13 years. She has the power to comfort me, teach me, and even "whoop" me. She was a part of my upbring and family.

I be back with real red beans and rice
forget the sausage, and start lookin for real red beans. Camilia Brand Red Beans are the best.

Oh, for shame. :oops: Maybe Lillian would put a whoopin' on me for my remark. All in jest my friends, all in jest.
I have one of Justin Wilson's books that has a recipe in it for this dish. It does sound good.

OK All,
In the hopes of passin something down, Red Beans where normally done on Monday. Why? Well it was wash day and the pot would just simmer so the clothes would get washed. There was no machine so the washin was outside and it was time consuming. No time for cookin!
Plus, Sunday would sometimes bring a ham for Sunday Supper. Ahhh, A leftover bone!!

Camillia Brand Red Beans are the best. Camillia is a pretty big outfit and probably have a website. They sell all types of dried beans, etc. Get'um if you can.
Red beans are kidney beans but Louisiana red beans are a little different. Dont ask me why cause I have no answer!

The real deal has no anduoille sausage. Thats kinda a tourist deal. The real deal is a leftover ham bone with alot of meat on it. If you got a smoked ham, I think that would be killer, just dont use a bone with no meat hangin on it. Watch out for the sweet hams too.

HERE GOES

1 - 1.5 lbs beans - soaked at LEAST 8 hours. They really need to be dried beans
rinse, rinse, rinse - less gas!

HAM BONE - trim all skin off - skin can give a rancid taste, I am talk'in about the brown outside layer. The football hide. Be carefull with something like a HonetBaked Ham, etc. Too sweet tasting. A smoked ham would be the BOMB!!!

THE HOLY TRINITY

Onion
Celery
Bell Pepper

Here you create your own - Lillian only used onion, yellow, about 2-3 onions chopped medium.
The Trinity is a cajun term for the above ingredients and and be used in almost anything. Figure you own preference.

Garlic- up to you how much

The bone, any sliced off chunks of ham (chopped), beans, onions, etc go in a big! heavy! tall! Soup Pot.

You dont add any seasoning until the end because of the ham and its salt content. Just wait till the end on all that stuff.

You need water. Lots of water. Cover everything in the pot and keep going until you can stick your finger in the pot, touch the beans and have the water reach up to your middle knuckle. This is important!!

Bring to Boil for 5 mins.

Reduce to simmer, low simmer and cover

Go Start the wash'in!!!!

Simmer low and slow - This is a 6 to 8 hour cook time. Remember to stir every so often. Every 60 mins at least

Last 2 hours, Lots of stir! Dont burn! They gettin thick, Yeah, Shy!

Last hour, Take of the lid. Taste, Add your seasoning.
Careful with salt - it can be a killer.
Add a whole stick of butter to the pot.

Start the white rice.

Get the french bread ready and then enjoy!!!

This is one of those dishes that always taste better the next day if left in the fridge overnight.

Freezes well.

Hot sauce and green onions are good when serving
Green Salad and you are a star!!

Enjoy and practice. It will get better every time you do it!
