I was just wondering if anyone try to smoke Buffalo meat? :roll: Or have any tips on how??? THANKS

Its not much different then Beef. It is a little leaner so you will have to watch it so it dosn't dry out. I found a spray bottle of apple juice works well on keeping your meat moist. Mist the meat once in a while. But remember if your looking your not cookin.

Gene I am not really sure. She just told me that she has 600 pounds of meat. And ask if I wanted to try to smoke some.

600#?, Get the ribs and do them up. It'd be like Costner in Dances with Wolves. :wink: You could tell stories like he did in the movie too. LOL

The hump is fatty and would make for a good roast. Some of the other cuts sliced thin and smoked make killer jerky too. There's a retaurant in Perry, Utah, Maddox Steak House, that serves farm raised bison and it is tasty stuff, grilled rare to med. rare, oh baby....................
