As for the SPAM and judges, just remember this, many regions of the world consider SPAM a delicacy. Hawaii is proud of their love of SPAM so even in our country it is popular.

Well I did grow up for the most part in the south its not something I had the pleasure of trying untill I reached Portland Oregon, but Ill do my best. lol

Brian spoke to me about the Spam category a little, so if you have specific questions not covered in the information on the registration or entry forms please ask a direct question and I'll try and answer it and then Brian can confirm my answers... (or deny them)! :shock:

The information I have is as follows:

The spam dish must be cooked outside, it can be cooked on any pit, (but the dish does not need to be cooked, it is a Spam free for all), fired by any fuel source, you may not use a microwave to cook your dish!

You don't need to enter if you don't want to, you may also do any prep before turn in's start and just finish the dish in the 30 minutes after teh Brisket turn in's.

The winner of the Spam challenge takes a cash prize and a couple of great looking T-shirts... runner up's get diddly-squat!

This will be a state championship when we reach 15 teams. We do have the governor's signature on the proclamation in our possession.

Pro Division:

Fifth $30 + Ribbon

BACKYARD

The payout will increase as more teams sigh up.

SPAM is very simple. No entry fee. You supply all you need to cook it and your own SPAM. It may NOT be prepared in your RV or camper. It must be prepared in am outdoor cooking method. A gas grill is fine to use, a dutch oven is fine to use. Turn in is up to you. Styrofoam to-go boxes WILL NOT be provided for SPAM entry. You may pick up your turn in trays and plates, bowls whatever, after all the judging is complete.
