First Pig Roast
My parents celebrated their 50th anniversary this past weekend, so we roasted a whole pig for the party.

This piggy was 110 lbs from the butcher. Mrs Bud did the honors of seasoning the pig while I watched and learned.

The seasoning is a paste of Garlic, Onions, Green peppers, Tomatoes, Parsley, Cilantro, Olive Oil, and Goya Sazon.
The paste is rubbed inside and outside of the pig, and into deep slashes made in the muscle tissue. Goya Adobo was also added inside and outside.

I scabbed together a rotisserie from an old gearbox we had laying around.

A generous pile of Charcoal and off we go!

This is about 4 hours in and starting to color up nicely.

Had to protect the piggy from the rainstorm.

After about 9 hours we let him take a little rest.

That is freakin' sweet! Nice job. Just curious, how much charcoal did you burn? That's a pretty good bed of ashes going there in the last pic of the pig...

Dutchovendude, The rain storm was just enough to cool things off. Only lasted about 10 minutes.

Sampson, I think I went through about 100 lbs of charcoal.

What the hay, we burnt the crap out of my lawn for that practice. Why not just dig a pit. Bet we could get Norm Z to give a hand with welding something up like this...

I got this pig from Garys meats in Payson 801-465-4344.
They prep pigs every Wednesday.
