Grilled stuffed mushrooms
For all you fungi eaters.
This is enough for 6-8# of 'shrooms, down size as needed.
1# bulk sausage (I like J.D. sage)(for biscuits & gravy too)
1- 8 oz. pkg cream cheese, room temp.
Mushrooms
Cook and drain sausage, do it in your smoker-grill rig. Ya gotta heat it up sometime.
Clean and stem mushrooms, don't wash, lightly brush them.
Chop stems, and mix with with sausage & cream cheese or food process the three ingredients, depending on how chunky you want the mixture. I do the sausage & c.c. in the processor, then
add the course chopped stems. Stuff caps and cook 20 minutes @ 350. Remove from heat and sprinkle with fresh grated parmesan cheese. These are good from an oven so they should be way better from a BBQ rig.
