Cajun Dressing
This is one of my favorite dressings because you mix hot and mild sausages, you can serve it any time you don't need chicken or turkey for this one. I've used it as a main dish a many time.

1 lb of hot link sausage (Q4U's Hot Link Sausage) <!-- m --><a class="postlink" href="http://www.q4u.com">http://www.q4u.com</a><!-- m -->
1 lb mild pork link sausage
1 large onion, chopped
1 large green pepper, chopped
3 stalks celery, chopped
2 (0.375-ounce) envelopes instant chicken noodle soup mix
2 cups uncooked regular rice
6 cups water
Brown sausage in a dutch oven, I use a black skillet, stirring to crumble sausage after it is chopped in small bits; drain. Stir in remaining ingredients, mixing well. Place mixture in a 4 1/2- quart casserole. Cover and bake at 350 for 1 hour; uncover and bake an additional 15 to 20 minutes or until moisture is absorbed. This is a great one in your smoker as well with a slight hint of Hickory flavor. Serves 12 to 15 servings. Enjoy!
