We have a few teams confirmed to come in Thursday night and stay thru Sunday morning for the "Smoke on the Hill" Comp! The GM from the Cutrubus Layton Dealerships, Chris Sorensen has graciously approved this.

So - our regular Friday Night Pot Luck Dinner will be at 7p Friday Night! And then we are planning a Saturday Night Pot Luck at 7p for all the teams that have competed this year, Judges, their families & all the employee's from the Sponsors at Layton Hills & Cutrubus VW!

Looking forward to judging this one. Especially since it's only 2.5 miles from my house and I missed out on judging Rock n Ribs.

Would liked to have cooked at this but I am in serious need of practice. Son and I will have to do lots for next season.

Only 3 Backyarders? Come on peeps!!! Let's get more teams for both groups!!!!!!

There is access to water & power, but you'll have to run a bit of cord if your not close to a pole with power. The water is off the buildings...

I've read that it's OK to prep your meat beforehand, but I haven't seen it. Does anyone prep their meat before a contest? Besides the obvious no marinade, etc. Just trimming is all I'm talking about. I'm tired of seeing everyone sitting around talking to the other teams, having a great time, and I am stuck prepping meat. Any suggestons? Thoughts?

Your turn in box will need to have 6 seperate(and make sure that each piece of meat is completely seperated from the next piece of meat, the judges will not seperate meat that is still connected to other pieces, meaning one judge will go without.) servings for each judge at the table. You dont have to make enough for every judge that comes. Each judges table will have 6 judges

Trimming and cutting your meats is AOK, you are not allowed to marinade, brine, or rub / slather any meats though.

I've been prepping my meat before the contest for 2 years now. What a difference it makes!!! Lots more time to relax and go over your game plan, plus you don't have to worry about hauling out or disposing of all the trimmings and fat. I HIGHLY recommend it!!

I agree with Carla. It is so much easier to trim your meat at home with all the utensils that you need. I usually save the package sticker in case the rep wants to see it. This came in handy when I was at a comp in Colorado. Since they didn't know me they wanted to make sure the meat was bought and not from my own farm (I wish).

Thanks Carla, Brian and Chris. Since I always get there late due to work, I am always rushing to trim and prep, usually until 12 or 1am. Hopefully I will have time tomorrow night to get some trimming done. Thanks.
