What wood would you use .. down by the seashore
A wise old man, yes T, told me to cook what I liked. Butt, what is a popoular wood for the Turkey smoke?

I have used Hickory, Apple and Cherry with some success. But, If all else fails, do as the master told ya, he knows his stuff!

The same wood I'd use in the mountains! Wink

I like an Oak & Apple, or an Oak, Apple & Cherry mix for poultry, I've not tried an Oak & Cherry mix without the Apple.

I just used a 50/50 mix of Hickory and Alder with great success. I use 100% Alder on fish. Turkey believe it or not takes on flavors as well as fish. I suppose it's not only the loose fiber make up of Turkey but also fish and Turkey are flavor neutral in that they don't have a built in strong flavor like pork and beef.

Yes they do have mountains in the UK, not quite the mountains we have over here, but mountain none the less! Wink

what wood would a turkey want to be smoked in?
hickory or oak for sure chased with some apple or cherry just because that sounds cool.
