first bacon wrapped fatty
We smoked a ham and a fatty for my sons birthday today. This was the first fatty that i have stuffed and wrapped in bacon, it was a cream cheese, jalapeno, and pepper jelly. Next time i'll have to do 2 of them because it went fast and was the favorite of the night.

You've discovered the nice / nasty thing about fatties, one is never enough, but as soon as you start doing two or three, people find that hollow leg, they forgot they used to have! Wink

We've done a few of them ouselves. One of our friends told us that was the second best burger he'd ever eaten. I then realized he was just finishing off his second one for the night. The only thing I didn't care for was the rare bacon under the lattice overlap. I used a recipe version Traeger sent out.

That looks good! I've made a few of those before but never with bacon wrapped around it. I usually use pepper jack cheese in the middle. Now I want a fatty......

I only wrap the bacon in one direction to avoid this problem. Not quite as pretty on the presentation, but theres no chewy bacon to deal with.

Pepper Jack would be great I believe. We use either bacon bits or well cooked bacon crumbled up and diced onions inside as well. Maybe diced fresh tomatoes as well? Don't forget your favorite beef BBQ rub. Swiss and a extra sharp cheddar would be winners also.

I do my fatty's with philadelphia, strong cheddar, and mozzarella cheese, cheddar next to the meat, mozzarella inside the cheddar and the philly down the middle, I add a layer of mashed garlic down the center of the philly.

I've also done them with a layer of pepperoni inside the burger sausage mix, with the 3 cheese and garlic center.

I've seen them done with sun dried tomatoes, and pesto centers, there is no limit to what you make them out of... other than the depth of your pockets and the contents of your pantry!
