Saturday's lunch: Tri-tip
Tri-tip with just salt & pepper smoked over lump coal with oak. A great Saturday lunch and very easy to prepare. Hope you like it medium rare.

I do a T.T. to 130* while it rests it'll climb to 135 or even a bit more.
Try a 1,2,3 seasoning for these. 1 part salt, 2 parts pepper, 3 parts garlic powder. The garlic gives it that extra something.

Love Tri Tip. Montreal seasoning pretty dam good! A fast hot seer 500*both sides then let it rip at 350* till done to your liking

I pulled this off the smoker at 137 degrees. My daughter is allergic to garlic and onions, poor girl, so I did this with the simple seasonings. The oak wood gives it a wonderful flavor.
