Brisket,Rib. and Chicken Practice
Hello all,
As H&D is a new up and coming comp team,we have been practicing on all of our meet categories every week and will do as so as I'm sure all of us do. Well our very first comp is coming up June 8th (Tooele County Wild Horse & Heritage Days BBQ) with is only a three meat turn in Brisket,Rib,and Chicken. So today I had a family/friend get together and figured what good way to get a three meat cook off going for H&D practice.

As a certified Judge may I make a few suggestions. From the brisket picture I can't tell if you cut it against the grain. It is very important that you do that otherwise the judge can't do the pull test and the meat will be tough. Has good color and the bark looks great.

Ribs look very good, appear to be cooked to just the right temp so they don't fall off the bone. The judge needs to be able to bit through without pulling all the meat off too.

A presentation suggestion for the chicken. When you prep them try and cut each piece so they are the same size, it makes a better presentation. Remember one of the scores is how it appears to the judge.

Keep up the good work and above all, have FUN!!!

Phred Thank you very much for the Judges stand point things I'm dire need of finding out If i'm on the right track.. Do you ever do taste testing on product for any cooks to give advice on if they are on the right track.

There are quite a few judges along the Wasatch front that would be very willing to try your bbq and give you an evaluation. I highly recommend that you take the next judges class that you can, that will help a lot too.

Here's a picture I took of some ribs at a comp just before turn-in. Note, these were not mine, another competitor.

Nice Pic. Here's my opinion:

Ribs Score: 8 maybe a 9 if not too much sauce (can't tell by the pic). Color is good, cut is clean and pretty even, arrangement is excellent in the box. Very appealing and delicious looking.
