BBQ competition
I just bought a Lang 60" and would like to get into bbq competition. I know it is a lot of work just need some advice how to get started. Any ideas or suggestions?

Welcome,

Well you came to right place. Biggest thing I can say is practice, and research you can finds lots of blogs and Video's on Youtube and Google. We are also a first year comp team the guys on here are a great source of info. I would start with Google and Youtube and learning your pit. Also get a journal and write down and record everything temps,woods, rubs,injections I mean everything!! And if you just got a lang he has video's on their homepage talking about ribs,brisket and pork butts. http://www.pigroast.com middle of their homepage. Hope this helps

Great news! Another Lang turns up in Utah (you are in Utah...right?) Several of us here also run Lang 60s and I would say the first step is to learn your cooker. Several good sites:
Of coarse the first would be the Lang web site. There you can watch videos on how to start your fire to temp control.http://langbbqsmokers.com/
Go through the blog, facebook and forum posts, they will help also.

Next join the BBQ Bretheren forum. There are Lang owner/operaters there than any other site. Always something new that someones done. I have added a slide out second rack and fire box coal basket which has helped a great deal.

I would like to see your rig and learn more about where it came from. My number is (801) 599-4433. Give me a call and we can chat. Here is some info that I gleamed off the internet that has helped me:

I have used charcoal baskets on my offsets for several reasons... mostly for having room for power-naps overnight; 3-4 hours between loads. Was also required when running the Lang 60 non-stop for 4 days straight.

Note: The basket in the Lang 60 can and did hold and burn 40 lbs of charcoal during a trial run, however had a difficulty keeping the temps below 300*. Would not recommend that. One 20 lb. bag will easily run 3-4 hours.

With all the vents open (4 daisy wheels on a 60); start with a lit chimney full in the firebox by itself... use the chimney to partially warm the smoker... or take a torch to a one full bag poured (lower corner) in a basket. Add wood chunks as needed for flavor.

Once up to temp, have closed 3 of the 4 vents fully closed... and throttle down the fourth @ 1/4-1/3 open.

The best time for charcoal is during the major holidays when on sale; Memorial Day, July 4th, Labor day, and end of season. Last year when Home Depot put all their Kingsford on sale I bought 400 pounds so the cost in cooking this year is way down.

Hello,
I do live in Utah (American Fork) and yes there is another Lang Smoker in Utah. I have the 2012 Lang 60" with the 40" chargriller in front. I will pick up the smoker this weekend at the Country Music Awards in Las Vegas. Anyhow, always looking to pick up great tips and advice. I would love to see some people/smokers in action. Thanks again for the great advice.

The quality of these Jensen pits are way nicer than the Langs in my opinion I think the craftsmanship of the Lang and some of the other smokers just don't compare. We also can and will build a reverse flow pit if requested I just prefer the standard offsets. But we will build whatever you like.

Gonna have to have you come out and run one of our pits Larry be a good time to sit down and talk railroad too. . . And learn a little something about what the Judges are looking for. I could definitely use your expertise in that department . . .
