Uncovered the Lang today and burnt the bird nests out of it. Cooking up three racks of St.louis and a couple dozen chickie thighs. Cleaned down things with a big bottle of hand sanitizer then hit it with a weed burner. I love the smell of napalm in the morning!

RE: What's cookin this weekend??
Interesting. Just opened a package of Tyson thighs I got at Sam's. Every one had a large flap of skin rolled under each piece of chicken. Just weighed the extra skin I cut off plus the diaper under them. Out of an 8.3 pound package I thew away 29 ounces of non usable stuff. At $1.38 a pound that comes to $2.50 worth of crap I paid for that goes in the garbage. That accounts for 20% waste. If you are in business, that hurts.

RE: What's cookin this weekend??
I decided to try the St. Louis cut ribs over at Cosco that Larry was talking about the other day. There were 3 racks in the package which turned out just right. We ended up feeding 9 and I have leftovers for lunch on Monday. Also cooked some bbq beans and some rolls in my dutch ovens. Oh, also cooked a peach cobbler in the dutch oven too. I used the coals from the smoker to cook the cobbler.
Everyone said they enjoyed it so it was a hit.

It's was my moms birthday this week and she wanted steaks so we bought a whole tenderloin from SAMs. I got about twelve steaks out of the 11 pound tenderloin it was a pretty good deal. We also did a brisket for fun. Every thing turned out great.
