Another question ... Walnut??!!
I have a neighbor who just cut down a walnut tree. Can one smoke meat with walnut and product a tasty product?? I am sure that one could actually "smoke" with the walnut wood. The real question is whether or not such an action could result in tasty meat.

My first thought would be maybe a bitter taste. I don't think I would even concider it on chicken... Give it a try, let us know

Tried it years ago!!! Very harsh, I thought it was nasty.

Havent used it myself, but here is a description I found.

WALNUT - ENGLISH and BLACK - Very heavy smoke flavor, usually mixed with lighter woods like almond, pear or apple. Can be bitter if used alone. Good with red meats and game.

I tried Walnut about 20 years ago on Brisket. Alone walnut is very very bitter. When i tried walnut with moslty apple wood it was not bed. That was as far as I wanted to go. Let us know if you try it.

Ditto the above on harshness. I have some Black Walnut and used only that in my wood fired cooker.
I threw out the meat! Very Bitter. If you use it, mix it with something else.

Man I don't know what to tell ya. . . I've not tried it. Might just use it to get your pit up to temp and then change to the wood you like. . . Packerbacker is right though it does make nice looking furniture. . .
