Another Pork Butt Adventure
I've been elected to do do a pork butt for my mom's b-day this weekend. I want to try and get more bark out of the butt, I was thinking about getting a bigger butt 10+ lbs. and cutting down into a couple of times about half way or so, so I could get more surface area exposed with rub. Then I was thinking of tying it up with butcher string for the cook...what do ya think? Am I just spinning my wheels? Thanks for any thoughts. Smile[/i]

If you crown the butts when you prepare them (cut a diamond pattern into the top), you will end up with more bark.

What I do when I want more bark is I trim the fat cap damn near all the way off because butts have a lot of fat to be rendered anyway so don't worry about them drying out. You say tying them are they bone out? The only time that I would tie them is when they don't have a bone. Hope this helps?
