6 Butts In The Smoke
I'll post some pic's later. The Lang is full up with about 55lbs of Boston Butts (6 total) and running at 235. Ribs go on the Jensen Pit later. This will be the first cook on the Jensen pit (backyard). Waited until I was doing ribs for it's inagural cook. Will post results (and pics) of how well it cooks also. I'm sure Mel is ready for some feedback finally, yes? For now, just enjoying the early morning pre-dawn quite and hot cups of chocolate macademia nut coffee on the deck while tending the fire. It's a good day.

Feeding 100 + tomorrow. One of the other guys at work is smoking another 2 butts. Just about let the fires go out, fell asleep for an hour but rescued them at the last minute. All are safely panned and foiled for another hour or two. After pulling, will put them back in the smoke for another hour to increase smoke flavor. Oh, the ribs are doing well, about 1/2 hour from being done. Just sauced them. I've had a bit of fun with fire management on that smoker. More to follow. I'm a bit busy now ;-).

As promised, here are some pics. The first one is of the 6 butts on my Lang. I don't know why anybody would want to do this every weekend, even for money ;-). Been at it since 0400. This is hard work! Just finished pulling about 40 lbs. of pork. We ate the ribs. Not the best I've done. I really had a time with fire management on the Jensen pit. It was either too hot or smokin' cause I wasn't giving it enough air. Consequently, the ribs were just a bit off. Wife liked them fine. Enjoy the pics.
