Chitterlings are pig intestines, a popular Southern food typically served during the holidays. They can be fried or boiled and then seasoned. Larry enjoy...I'll stick to the traditional turkey this year. Wink

Everything I've read says that the time you spend cleaning them is well worth it, to bring the flavor from an earthy organic one to it's best?

Then as Pigout says boil or fry or boil then fry!

But when you think about good sausage with natural casings, those casings are made of sheep intestines for breakfast links, hog casings for brats, and beef casings for pastrami and salami, so it's not that we don't eat them...it's just that we don't think about eating them!

Chitlin's are a little more in your face than sausage, IMO!

I wonder if we're going to see them on the shelves all year round or if they brought them in just for the holidays? Perhaps they will turn up at a potluck or two? Wink
