pork butt
I have been asked to cook up some pork butts for my co-workers. How many people would a 8 pound pork butt feed? I have to figure out how much I need to buy/cook for 80 people. I know may of you out there cater and would be able to help me figure this out.

I don't cater but I'll give you the numbers anyway.

You get about 50% yield on butts, picky folks can get down to 45% when cleaning out silver skin, bones, fat, connective tissues, on the other hand you can get as high as 60% if you are not as picky.

So based on the 50% an 8 lb butt will yield about 4 lb usable meat.

Serving a 4 Oz portion per person, (4 servings per lb, small portion), you can serve 15 - 16 people.
Serving a 5.33 Oz portion per person, (3 servings per lb, good portion), you can serve 11 - 12 people.
Serving a 8 Oz portion per person, (2 servings per lb, big portion), you can serve 8 people.

80 / 15 = 6 with some spare.
80 / 12 = 7 with some spare.
80 / 10 = 10 with a lot spare as you wont have everyone eat a full 8 Oz on their plate.

Cheaper by the case. Cases have ten butts or about 8o pounds of product.

I have been buying my pork butts from D&M Meats in Ogden - 75 to 85lbs with 8 butts in it!

Also you might want to watch the servings. I did an event with young healthy men hunters. The plan was 4 oz servings and let the guys serve themselves with the customer supervising the meat as they requested. I went on to other things. Soon the customer came to me and said we were running out of pork. I went to the serving line and stood in horror watching the guys putting at least a pound or more of pork on the buns and at least another half on the plate. I immediately put one of my cooks on the line. Luckily I had cooked extra! I found out quickly not to let the customers be in charge of the serving.

Yo Fidel, Food Saver on 35th South just short of Redwood Rd. has .89 cents a pound price on pork shoulder. Usually Sam's clubs price changes come out on Wednesday. Last week the case price was $1.31 for pork butts. Hope this helps?

I will be cooking for 2 dealerships (80 people at each location) and Mark Miller Subaru is paying for everything so I don't care about cost. It's not coming out of my pocket, and that's all that matters Big Grin I cook what I like and I love it, but how do you cook for 80 people and hope they love it also.

How did this cook go?? hard to screw up pork for the aberage bbq eater... I like to figure 8oz per person or 10 people per butt... that is what I have found..
