Pork Loin
Along with my GIANT two pound brisket I wanted a small pork meat. Not wanting to cook a whole butt for ever I spotted the pork tenderloin which came in a two pack. When I put it on I found it was actually four pieces of meat. Having never cooked this before I just took a guess at the time. After rubbing with Texas Pecan, resting overnight, I put it on the pellet cooker at 225. I pulled it 4.5 hours when it hit 165. Results were fantastic served with Traeger Aprocote BBQ sauce. I'm going to remember this in the future when I need a nice spliced layout for a party.
I'm also going to use meat glue to fasten this onto Boston Butts for contests.
