Pastrami
Anyone wanting to make pastrami should think about doing it soon while corned beef is on sale. Pastrami is just corned beef with a rub and then smoked.

RE: Pastrami
I'am waiting for the price to drop next week after Paddy's day! Wink

Respice, adspice, prospice. Latin proverb.
Respice = you didn't use enough spice the first time! adspice = you ought to add spice, you know? prospice = you should be an advocate for spice!

RE: Pastrami
I've never smoked corn beef...sounds fantastic, what rub do you use? What temp are you smoking at? What internal temps are you trying to hit? Cooked to medium? Thanks Huh

RE: Pastrami
It is simple. Just get a corned beef brisket. Throw away the spice packet. Rinse the brisket well, apply your favorite brisket rub and cook just like you would cook your brisket. They are awesome!

RE: Pastrami
I have been know to engage in a little "Fauxstrami" activity.
I prefer the point to the flat when buying the corned beef.
