Backyard teams are welcome to arrive with the Pro's, or to arrive Saturday morning, set up, go to the cooks meeting, cook, tear down, pack up and be able to go home all in the same day!

The Pro's also cook Briskets and Butts, and they really need to arrive before midnight, if they don't want to have to cook hot and fast!

Newbie questions here... I was goign to attend the competition more from a spectator standpoint, I kind of wanted to see what it was like and what to expect as I would love to start doing some of the competitions. Obviously, I'm going to start as a "backyard" cook. With the lack of Backyard entries this year, I guess I'll just ask a few questions. First, is it too late to sign up? Are there restrictions on the type of cookers I can use? I know with the pro it has to be charcoal or wood fuel but, could I use a propane smoker? If I do sign up, is there anything I need to know in advance or, should I just show up and assume there will be directions there?

Thanks for any help in advance, let me know if there were any questions I should have asked that I didn't!

Good competition to cook at as a backyarder! Still time to sign up to cook it.

We pay out down to 3rd place and if you come you will be a winner for definite! Wink

You can cook on whatever you have as a backyarder, gas, electric, solar, wood, charcoal, pellet or any combination of them.

You need to arrive early enough to get set up, go to the cooks meeting, start your fire and have your meat cooked by 1:30 for chicken and 2:00 for pork ribs.

You can pretty much turn in any chicken, as long as you separate it into 6 separate pieces before you put them in the box, most folks cook thighs, but you can try other things. For the ribs you can turn in spares, St Louis trimmed spares, loin back or true baby backs.

We provide the turn in box's and the foil to line the bottom of your box, to prevent burn through of the meats.

You might want an EZup or other cover, a table, couple of coolers, one for drinks the other for your meats, some chairs etc.

You may trim meats before you get there, but you CAN NOT brine, marinade, inject, season or do anything else to the meat, except trim it, before you arrive.

There will be a meat inspection to ensure that meat is raw, before the cooks meeting.

Yes... you can pre-make sauces and rubs... You can even pre-trim your meat. You just CANNOT pre-season, brine or marinade you meat prior to inspection.
