Star First cook on the Yoder 640 - lil help?
All,
I brought home my new yoder 640 last saturday and did my first cook after burning it in for the prescribed hour @ 350.

I smoked a pork butt, at 275 degrees for 6 hours. It had no bark, little flavor and the center was tough.

Admittedly, this is my first pellet cook, i have smoked for 7+ years on my green egg and UDS's with great success but thought id try the convenience of the pellet stove.

I had 2 probes going, one on left (bottom rack) and one on right bottom rack.

I found that the temp diff between the two was about 20 degrees, but even worse i found that the temp diff between mt set point and my probe was more than 40 degrees.

I also burned through 20 lbs of pellets in 6 hours and had to finish in the oven. I foiled it when i moved it into the oven.

I used pecan pellets, and the probes went in through the door on the cooker, i saw smoke escaping out the bottom grease drain hole and the small gap in the door of the cooker where the wire for the probe went in.

I am REALLY dissapointed but gotta believe that I must be doing something wrong..........Can you all help me out?

Pigout and Jesse also use them both with good outcome. You might try a PM to them.
