temps for cooking
Here is a true newbie question.

I reading the post on the Tel-tru thermometer and saw the picture that showed temp ranges 150-250 smoke 250-300 barbecue and so on. What do you want to cook at, smoke or barbecue?

I cook most of my meats between 220 and 250. Chicken I may tend to let drift a little higher (250 - 275). I would think that most cooks are around this range.

Yep, I'm the same - I shoot for 235º-240º for most stuff, except for chicken which I do around 275º and turkey I do at 300º. I might try a hot and fast brisket this weekend too, which would be higher than that. We'll see.

I try and cook somewhere between too cold and too hot! :wink:

But I often cook hotter at home than away from home, 250 - 300* chicken as high as 325*.

Away from home 225 - 275* chicken as high as 300*.

Those temps are good unless you are competing... Then you'll need to crank everything up to around 350 or better, it's a new JKBS rule for the year...

I usually run my Bristes around 300, ribs 275 and shiggins at 325. Keep in mind that is the grate temp and not the temp on the door. Your door temp in most cases runbs different than the grate depending on how far your probe goes in the pit through the door. I like using the ovent thermometers on my grates next to the meats
