Hey all,
My name is Russ. Just wanted to introduce myself as a meat enthusiast. My family and I have been smoking for years and we love it. Not really into competition just for fun and good eats. We are using a Masterbuilt Old Generation 30-Inch smoker with a few mods and that does just what we need it to do .
My brothers and I are starting to cure meats and I've already gotten some great ideas from folks on this site so I will be posting soon with our first attempts.
Thanks for the welcome!

Hello All!
My name is Russ I am from Holladay! I'm super excited to be a part of this forum.

I am looking for meat curing ideas. My brothers and I have just recently made a curing chamber in our garage (http://artisanbros.blogspot.com/2013/04/...mber.html) and we are looking for easy recipes for curing. We have looked at a lot of hams and salamis but they are all pretty involved as far as we can tell.

Does anyone have a simple beginners recipe for curing meat? At this point we don't care what type of meat, we just want to see if our chamber works well!

Thanks for your help!

If there are 15 Teams for a 1st year event and/or your 25 team for a 2nd year event & one... And one team misses a turn-in time. The Grand Champion gets screwed out of qualifying for the Jack Daniels World BBQ Invitational! Event though you have enough teams and the late team tried to get their meat turned in on time!
Let me RE-introduce myself. I am an avid back yard BBQ-er who has been quietly stalking all of the posts on this site for the past year or so ... but have not posted anything. Things have been crazy at work etc. etc. etc. etc. It is good to see that y'all are having so much fun BBQ-ing. I am doing the same.

I am thinking about getting a pellet smoker and what your thoughts, opinions, musing, etc. I currently use a drum smoker that I build a few years ago. I love it, but was something a little less time-intensive and the pellet smoker is very appealing.

Right now I am looking at three smokers:

1. Traeger Texas
2. Green Mountain Grills Jim Bowie
3. Rec Tec Grill

Each comes with its associated pros and cons. For me, the biggest hurdle is the cost. I struggle to drop down around $1000. The Traeger and GMG smokers are on sale this week. I spoke with the Rec Tec guys on the phone and they will throw in a TON of stuff for the price (220 lbs of pellets, cover, Maverick thermometer, etc.).

I'll be doing a whole heck of a lot of practice, cause I sure do need it.

With that in mind, here's my first cook on the new tables, with my newly acquired Dutch Oven skills, (or lack of them)!

Trying out a couple of things.

Standard Box Cake in the 10", bread in the 12"!

I won't be showing the bread or any description until the end of July, I don't want to give out too much information, about the secret stuff until after the first competition is done and dusted.

Turned the lid 1/4 turn one way, and the dutch 1/4 turn the other way at 15, 25, and 35 minutes.

It wasn't quite done so I gave it 5 minutes more, still not done so I gave it another couple of minutes, and out it came

Bottom was not burned, it was a light and fluffy cake, it also didn't last very long at all, and I failed to get pictures of it disappearing!

Still got some more work to do, trying the bread and a different chocolate cake today.

Hello my BBQ brothers,
We're having a fundraiser for my brother in-law Stan Gurney who suffered a severe heart attack last Tuesday and is still in the ICU in critical condition. The fundraiser is next weekend at BBQ Pit Stop in Lehi. We've had several local Competition BBQ Teams that have generously offered to volunteered their time and equipment to come cook championship bbq for us to sell. We'll be selling pulled pork, brisket, and ribs. All products will need to be paid for in advance. We'll also have a limited number of pulled pork sandwiches available for purchase the day of the event. All profits will be given to Stan's family to help with his ever increasing medical expenses. Thanks to all those who have agreed to donated their time and or equipment!
I made one the other day so I could trade it for a camper to build my bbq roadside shack. I used it and I could not believe how amazing the thing worked. For the first time I got to sleep while making bbq. These things are amazing.

The purple Gorilla
There were two hunters, hunter 1 and hunter 2. They would always boast about who could kill or catch the best animals. Hunter 1 decided to invite hunter 2 over to his house to show off his latest catch. He said he had caught a purple gorilla, the most rare of all the gorillas. Hunter 2 in disbelief goes to his house. As hunter 2 entered he could see hundreds of animal heads mounted on the walls. Hunter 1 goes over to his bookshelf and pulls a book slightly. The bookshelf opens to reveal an enormous staircase leading downward. Hunter 1 motions for hunter 2 to follow him down. As they descend in pitch blackness hunter 2 can make out a room. They approach the room with a single door and a glass container with two aluminum suits inside. Hunter 1 says to put these suits if you don't want to die. They put the suits on and hunter 1 unlocks the door using a keycard. They enter and as soon as they do bolts of electricity shoot at them rapidly. They are unharmed and make it out safely. They take the suits off and hunter 1 closes the door behind them. Still in pitch blackness they walk for what seems like an eternity, until they come up to a giant pit. Next to the pit are two pairs of rubber boots. They put them on and climb down a ladder into the pit. Inside are thousands of snakes. They start running hoping to reach the end, at the same time brushing the piles of poisonous snakes off of their boots. They reach the end and climb a second ladder to get out. They take their boots off and start to walk again. This time they approach an enormous lake which spreads on for a couple hundred yards. There is a dock at the beginning with a boat and two oars. They climb in the boat and start rowing. Suddenly alligators start to attack them. They row faster all the while knocking the alligators away with the oars. They finally reach the end and get out of the boat. They again walk in pitch blackness and not soon enough approach an absolute gigantic monolith of a door, with a single slot for the keycard hunter 1 used earlier. Hunter 1 swipes the card and the door opens. They walk for a brief time and come upon a second door only a slightly smaller. Hunter 1 swipes the card and they walk through. They again come upon a third door, slightly smaller than the preceding one. This process repeats until they get to a door about a foot tall. Hunter 1 swipes the card and they both crawl through. The door opens up to a dark room. The only thing inside is a cage in the back right corner, big enough to fit an elephant. Hunter 2 notices a figure in the farthest corner. Hunter 2 begins to take a closer look but hunter 1 warns him he may go no closer if cares for his life. Hunter 2's curiosity gets the best of him. The figure starts to move and hunter 2 can make out the color of it, a deep purple. Hunter 2 now sees the huge beast as the gorilla, hunter 1 was talking about. The gorilla creeps closer to hunter 2. Hunter 2 decides out of his shear insanity that he wants to touch it. He pokes it. The gorilla is furious. The beast breaks open the cage as if it was nothing leaving a huge gaping hole of twisted metal. The hunters run in fear for their lives. Hunter 1 swipes the card for the smallest door and they crawl through. He keeps swiping the card for each consecutive door and they rush through. They reach the last door. Hunter 1 closes it behind them and they keep sprinting. Hunter 2 looks back to see the purple gorilla smashing through each door with ease. The hunters reach the lake. They're rowing and knocking the alligators off and rowing until they reach the end of the lake. They look back and see the beast jump across the entire lake and keep running towards them. They keep sprinting until they reach the pit of snakes. They put their boots on and jump down. They're sprinting and brushing the snakes off and sprinting until they reach the end of the pit and climb the ladder to safety. Hunter 2 looks back and sees the gorilla jump into the pit smashing the snakes, ignoring their venomous bites. They keep running as fast as they can until they get to the first room. They put the aluminum suits on and hunter 1 swipes the card so they may enter. They run through the room as lightning bolts bounce off of them. They get to the end of the room and take their suits off. Hunter 1 swipes the card to the room and the door closes behind them. The purple gorilla, still chasing them, rips off the front of the room and throws it aside. He runs through the room ignoring the bolts of lighting. The hunters sprint up the stairs, not looking back, as they know their fate. They reach the top of the stairs and enter the house, closing the book shelf behind them. They cower in the corner hoping their death will be quick. The monstrous creature smashes the bookshelf and slowly approaches the two hunters. The purple gorilla, looking at the second hunter, reaches out his hand, pokes the second hunter and mumbles "tag."
