Keeping things hot

I am in charge of the meat for a family reunion this weekend and wanted to get some input. I'm planning on cooking up a few briskets but as that I am in SLC and the Reunion is in Brigham City I am planning on doing my cook starting on Friday night and then foil them and stick them in a couple coolers I have just as I am ready to leave. Do you think the coolers will hold the temp good enough for me to serve the briskets several hours later or should I arrange for another cooker to be available to bring things back up to temp.

I plan on wrapping some bricks in foil and heating them up and palcing them in the coolers as well to help hold the temp.

Your comments and suggestions are appreciated....

you could always just re-heat them in an oven. I did that for Fathers day and it turned out great.

I have just double foiled the meat, put some old towels in the bottom of a ice chest, put in the foiled meat, cover with more towels. Should hold 3-4 hours I'd say, from past experiences.

I have done the same as Gene. You should be good for anywhere from 3-6 hours depending on how insulated your cooler is.

thanks all..... I will do the double foil as Gene suggested and through in now towels and see how it goes....

Yup! You will be amazed at how hot they will stay. You can also boil some water in a pan and place it in the empty cooler to pre heat the cooler.

Though be careful to not take the pan straight off the stove and put it on the unprotected bottom of a cooler... don't ask me how I know not to do that one! :oops:

I too have a "special" cooler just for holding meat! Good point Chris!

Yep, don't pack the towels too tight but do fill up all the empty space in the cooler... Swing thru Logan on the way and we can check out the temps together :wink:

Chad, I live up in Brigham if you get in a bind with anything. So where is the Reunion? We are all family when it comes to BBQ, right? :wink:

A bit late I know but just another tip - don't use the wife's good blankets or towels....again, not that I would admit to why I know this! :oops:

And furthermore... If ya happen to get one or all of the tightly wrapped foil packages leak on the "favorite" towels :( DO NOT! put them directly in the wash machine!!!! :oops: :oops: I highly recommend pre washing them in something else. Trust me on how I know this :roll:

Nor do you ever put those same towels in the washer with other clothes thinking you can hide the evidence...something about the smell of BBQ grease can never seem to come out of anything!

This thread is another testament to the good nature and generosity of the women we have in our lives! It's amazing that any of us are stll married :D
